I read about a guy who kayaked from San Fransisco to Hawaii and he had a salt water filter. Does anyone know where to find one?

Katadyn makes a Hand-Operated Emergency Desalination Water Maker called the survivor. I beleive it was developed for the military for survival situations but is available through many retailers. It has a Coast Guard approval and will yield 1 oz of water per 2 minutes of pumping.

Kyle,
Katadyn/PUR does make a complete line of desalination products some hand operated some requiring a source of power.

They typically are present at most of the larger boat shows in the country and at many marine specialty shops either in stock or as a special order item. I'm pretty sure you can also order direct.
